Meal Planning- Thumbs up or down?

On a pretty regular basis, I try to follow other organizing blogs to see what people are writing about around the country. Some of them I find pretty interesting. One topic I see on a regular basis is Monday Meal Planning. It is pretty popular and I can’t believe how many people really sit down and plan out meals for the week. I probably should seeing that I’m an organizer, but I don’t. I like to cook or eat “whatever I’m in the mood for”. Too much planning makes me feel stifled. I will admit, if you have plan it saves time and energy during the week when you’re busy or don’t feel like cooking.

Well, every once and awhile I get a spurt of preparedness in my blood. And yesterday was the day. I had some time to go through my recipes and cookbooks and came up with some good summer recipes I’d like to try and I planned meals. Here’s what steps I took. I had to 1. find recipes I felt like trying 2. write down ingredients I had to buy 3. find the right coupons to save some money 4. go shopping at two stores (one grocery and one fruit/vegetable market) and 5. make a list of the things I could now make (so I wouldn’t forget)

Whew! It took a lot of work. But alas, we benefited from my hard work. We had lasagna last night. That’s better than leftovers or a random grilled cheese sandwich.  Here’s our menu options for the next week or so: taco salad, broccli/cheese casserole, white bean/avocado club sandwiches, feta & strawberry salad, pesto pasta, and meatloaf.

Do you meal plan? What are time saving tips and tricks you could share with us?
